Les Corones attends a masterclass by Ricard Camarena, one of the benefits of having been awarded the Ecovidrio prizes. Les Corones received the award, along with 9 other restaurants on the peninsular coast, for its environmental commitment. This masterclass, specifically, consisted of a visit and explanation of chef Ricard Camarena’s garden. During the visit, they observed the care for local produce that comes from the garden and that Camarena uses in his restaurants.
In the talk he gave them in the garden, he explained how he managed to create a cuisine that makes the most of what the land provides. Utilizing the different parts of vegetables, greens, fruits, and some plants for his dishes. Obtaining ingredients for dishes, drinks, or creams that he combines to achieve natural and original textures, colors, and flavors. Subsequently, the awarded restaurateurs moved to Ricard Camarena’s restaurant to enjoy a tasting by the chef, who has been recognized with two Michelin stars and the Green Michelin Star.
Commitment to the environment and sustainability
Les Corones maintains a commitment to environmental sustainability. That’s why, at the time, we opted for quality plans. Recently, we have adhered to the European Charter for Sustainable Tourism. A charter associated with the Montgrí, Medes Islands and Baix Ter Natural Park and a commitment to good environmental practices. We also participate in the Week of the Montgrí, Medes Islands and Baix Ter Natural Park, offering special menus that promote the local economy. Likewise, we have suppliers from the Natural Park’s area of influence. We also have them involved in local economy sustainability projects. The entire team is aware of responsible waste management and incorporates recycling into all tasks, works with local suppliers, and minimizes the use of water and chemical products.
